Ingredients

  • 500 g reduced-fat Greek yoghurt
  • 30 g vanilla whey protein isolate
  • 150 g mixed berries
  • 2 tbsp chia seeds
  • 30 g pistachios — roughly chopped
  • 1 tbsp pumpkin seeds
  • 1 tsp vanilla extract
  • 1 tbsp honey optional

Instructions

  1. Line a small baking tray or container with baking paper.
  2. Mix the yoghurt, protein powder and vanilla until smooth.
  3. Spread the mixture evenly over the tray to about 1.5 cm thick.
  4. Scatter over the berries, chia seeds, pistachios and pumpkin seeds.
  5. Drizzle with honey if using.
  6. Freeze for at least 4 hours or overnight.
  7. Break into pieces and store in a freezer-safe container.
